For Thanksgiving, Cristina made this delicious Candied Sweet Potato Casserole dish. It would taste just as delicious for Christmas dinner!
The recipe is below 🙂
Ingredients:
1/2 cup coconut palm sugar
1/2 cup chopped pecans
1/4 cup coconut oil
5 pounds red-skinned sweet potatoes, peeled, cut into 1.5 inch pieces
2 tablespoons ground flax seed with 6 tablespoons water
3 tablespoons pure maple syrup
2 tablespoons vanilla extract
1 tablespoon fresh lemon juice
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon sea salt
Directions:
1. Preheat oven to 350 F.
2. Mix sugar, pecans and coconut oil in small bowl and chill in fridge. Can be made up to 2 days ahead. Keep refrigerated.
3. Cook cut sweet potatoes in a large covered dish for at least 30-40 minutes until very tender.
4. Remove sweet potatoes from over. Puree sweet potatoes in processor or with an immersion blender in a large pot.
5. Add flax seed, maple syrup, vanilla, lemon juice, spices and salt to pureed sweet potatoes. Transfer sweet potato mixture to prepared dish. Sprinkle pecan topping evenly over mixture.
6. Bake until sweet potato mixture is set and topping bubbles, about 1 hour. Let stand 15 minutes and serve.
