With the fall chill and winter quickly approaching, Dr. Alex loves to eat soup! This Butternut Squash Soup from FoodBabe is one of our go to soups at the Alexandroni household. Try out this easy recipe the next time you want something to warm you up on a cold day!

Ingredients:

1 large butternut squash or 4 cups cubed

2 tablespoons coconut oil

3 carrots, diced

2 celery stalks, diced

1 onion, diced

½ teaspoon chopped fresh thyme

1 tablespoon chopped fresh sage

4 cups low-sodium organic chicken broth or vegetable broth

1 cup coconut milk

½ teaspoon sea salt

½ teaspoon pepper

Directions:

1. Preheat the oven to 400 degrees.
2. Cut the butternut squash in half and place face down on a baking sheet. Bake for 35-45 mins, or until fork tender. When done, scrape out the insides and set aside.
3. Heat the oil in a large soup pot over medium heat.
4. Add carrots, celery, and onion and cook until the vegetables have begun to soften and the onion turns translucent, 3-4 mins.
5. Stir in butternut squash, thyme, sage, chicken broth, coconut milk, salt, and pepper.
6. Bring to a boil, reduce heat and simmer until the flavors have combined (about 15-20 mins).
7. Use an immersion blender to puree the soup. Alternatively, let the soup cool slightly and carefully puree in batches in an upright blender.
