Mango Avocado Salsa
Made with juicy mangos and creamy avocado, this Mango Avocado Salsa is sweet
yet tangy, refreshing yet a little spicy. This would be perfect for the final summer BBQ!
*2 cups peeled and diced mango
*1/2 cup dried red onion
*1/2 cup diced English cucumber
*1/2 pint cherry tomatoes
*2-3 jalapenos diced
*3 tablespoons fresh orange juice
*1/2 cup loosely packed fresh cilantro, finely chopped
*Sea salt and pepper to taste
*1 large ripe avocado diced
1. In a medium bowl, combine the diced mango, red onion, cucumber, cherry tomatoes,
jalapenos, orange juice, lime juice, and cilantro. Mix to combine. Season to taste with salt and pepper.
2. Then add the diced avocado and gently mix to combine, taking care to not smash
the avocado. Taste for seasonings and adjust as needed.
3. If possible, allow the salsa to rest at room temperature for 20-30 minutes to allow the flavors to deepen.
